Three-layer chocolate cake topped with whipped cream…Warm, fresh out of the oven, fruitcake with a golden crust…Thick, creamy custard is a sophisticated and refined dessert…
For many of us, all of these and other exquisite dishes are only available in a pastry shop or bakery. However, making desserts on your own, even those that seem to be found only in five-star restaurants, is a lot easier than you might think. In fact, anyone who learns the basic principles and cooking techniques that pastry chefs are taught can bake and make delicious and beautiful desserts. Once you have mastered the secrets of pastry making, you can:
Improve your skills as a chef,
Impress your family and friends with your culinary skills,
Learn to have fun and enjoy baking casual and non-standard dishes.
Experiment and create your own desserts.

During this six-lecture class, you will be taught by an accomplished chef, winner of numerous professional competitions, and a Distinguished Educator from the Culinary Institute of America. He will show you tried and trusted techniques for making desserts ranging from simple cookies to castard, profiteroles and chocolate mousse.

  1. neat and gentle: making dough
    Learn a few basic principles and techniques from which you can then create unforgettable desserts. We’ll talk about organizing your workspace, properly measuring ingredients, mixing butter, eggs and sugar to the right consistency. Afterwards, as a demonstration, the chef will make cookies and pound cake and show you what can go wrong.
  2. cake making techniques.
    No matter what kind of cake you’re making, they all rely on the same mixing techniques. What are these techniques? What’s their secret? The chef will show you step-by-step how to make a delicious and thick chocolate cake and several cakes made with whipped egg whites (American whipped egg cupcake and light “angel” biscuit), and you’ll learn how to properly whip eggs and refrigerate cakes using the latter as examples.
  3. First-class cookies and sweet cakes
    In this class, you’ll learn everything you need to know about puff pastry – and even experienced pastry chefs have problems with it. First, learn how to make pie crusts – by hand or with pastry tools, how to bake them, and how to decorate the top of a pie. Then learn the secrets of making delicate, flaky biscuits and concon buns.
